Preheat the oven to 350°F and lightly grease a 9x13-inch baking dish. Slice the Hawaiian rolls in half horizontally, keeping the tops and bottoms connected so the sliders stay together while baking.
Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking the meat into small crumbles as it cooks. Season with salt, pepper, and garlic powder. Cook until the beef is browned and no pink remains, then drain any excess grease so the sliders do not turn soggy.
Stir together the mayonnaise, French dressing, relish, mustard, vinegar, onion, paprika, and sugar in a small bowl. The sauce should look pale orange with visible bits of relish throughout.
Place the bottom half of the rolls into the baking dish. Layer the American cheese slices over the bread so they slightly overlap. Spoon the hot beef mixture evenly across the cheese, spreading it all the way to the corners.
Add pickle slices across the beef layer, then drizzle about half of the sauce over the top. Sprinkle the shredded cheddar cheese evenly so every slider gets a cheesy center.
Place the top half of the rolls over the filling. Brush the tops with melted butter and sprinkle with sesame seeds and dried onion flakes. Bake uncovered for 12 to 15 minutes, until the tops are golden brown and the cheese is melted around the edges.
Let the sliders cool for about 5 minutes before lifting the tops slightly to tuck in the shredded lettuce. Add extra sauce if you like a saucier slider, then slice and serve warm.
