Mix the spices – In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and red pepper flakes. Stir until evenly blended.
Cook the meat – Heat olive oil in a skillet over medium heat. Add your choice of ground beef or chicken. Break the meat apart with a spatula and cook until lightly browned.
Add seasoning – Sprinkle 2–3 tablespoons of the homemade taco seasoning over the cooked meat. Pour in ¼ cup water and stir to coat the meat evenly.
Simmer – Reduce heat to low and simmer for 3–5 minutes, until the meat absorbs the spices and the mixture is slightly thickened. The meat should glisten with seasoning and have a rich, deep color.
