In a large mixing bowl, add ground chicken, grated onion, minced garlic, breadcrumbs, egg, peri-peri sauce, smoked paprika, cumin, cayenne pepper (if using), salt, black pepper, and fresh parsley.
Using clean hands, gently but thoroughly mix all ingredients until just combined. Be careful not to overmix.
Divide mixture into 4-6 equal portions and shape into round patties about 1 inch thick and slightly wider than burger buns.
For best results, place patties on a plate, cover loosely with plastic wrap, and refrigerate for 15-30 minutes to firm up.
Heat olive oil in a large skillet or grill pan over medium-high heat.
Carefully place chicken patties in the pan and cook for 5-7 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
