In a small bowl or jar, combine olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, minced garlic, salt, and pepper.
If using a jar, shake vigorously until well combined and emulsified. If using a bowl, whisk continuously until smooth and slightly thickened.
Taste and adjust seasonings as needed.
In a large mixing bowl, add washed and dried mixed greens or crisp lettuce.
