Bring large pot of salted water to boil. Add bow tie pasta and cook according to package directions until al dente (10-12 minutes). Drain well, reserving 1/2 cup pasta water.
Heat olive oil in large skillet over medium-high heat. Add ground beef and break apart with spoon. Cook until browned (5-7 minutes). Drain excess grease.
Reduce heat to medium. Add chopped onion and cook until softened (3-5 minutes). Stir in garlic, Italian seasoning, salt, and pepper. Cook 1 minute until fragrant.
Pour in undrained diced tomatoes and beef broth. Bring to gentle simmer, scraping browned bits from pan. Simmer 5-7 minutes to thicken slightly and meld flavors.
Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and smooth. Add reserved pasta water if sauce is too thick.
